Summer salads are a great way to prep a large part of a meal beforehand. I like to make my salads ahead of time and store them in the frig. Between work, laundry, and writing, my time is stretched in many ways. Today I want to share with you a fun salad recipe.

 

By including a variety of ingredients, salads are often a nutritional powerhouse: This recipe provides lots of antioxidants from the grapes, healthy fats and vitamin E from the sunflower seeds and grapeseed oil, and folate and vitamin A from the arugula.
